Whole30 Watermelon Salad

The summer recipes are really making very happy right now. You know I am all about quick and easy meals. This Whole30 watermelon salad is no different. Yes it’s beautiful and delicious, but it is also the easiest dish you’ve made in a while.

I’ve been enjoying this salad for weeks now and I don’t know why it took me this long to share it with you. Don’t ask me questions I can’t answer. It’s one that you friends and family will be so impressed. But, you and I know it took you less than 10 minutes to out together.

WATERMELON SALAD DRESSING:

No need to complicate things. This dressing is very simple and to the point. All you need is a few ingredients you already have in your pantry:

  • Olive oil
  • lime juice
  • orange juice
  • salt and pepper

When I’m not doing a round of Whole30, or when I feel like it, I like to add a little honey or maple syrup to the dressing just to give it a touch of extra sweetness.

Now that we’ve talked about the dressing, the rest of the salad is very customizable. It is a salad after all so think of the watermelon and dressing as the base. The rest of it is up to you. You can stick with our recipe, or you can add your favorite vegetables and toppings and make it your own. I love the creaminess of the avocado paired with the saltiness of the prosciutto, the sweetness from the watermelon and then the tangy dressing just brings it all together.

For herbs, basil and mint are the best way to go here. Mint and watermelon are magic together and I enjoy adding the extra spicy flavor of basil leaves for more brightness. You can stick with just mint leaves of course.

Whole30 Watermelon Salad

Ingredients

  • 1/4
    cup olive oil
  • 1
    tbsp lime juice
  • 2
    tbsp orange juice
  • salt and pepper
  • 5
    cups diced watermelon
  • 1
    avocado, diced
  • 1/4
    cup raw nuts, chopped
  • 2
    ounces no sugar added prosciutto
  • 2
    tbsp freshly chopped mint leaves
  • 1
    tbsp freshly chopped basil leaves

Instructions

  1. To begin, add the olive oil, lime juice and orange juice to a small bowl and whisk to combine. Season the dressing with salt and pepper to taste and set it aside.
  2. Now, add the watermelon, avocado and nuts to a serving dish. Pour half of the dressing over the watermelon mixture and toss to combine. Scatter the prosciutto, mint and basil leaves over the watermelon mixture and finish with the remaining dressing. Serve immediately.

Notes

  • if you’re planning making this ahead of time and having it for a few days, I recommend not adding the avocado until you’re ready to serve. The avocado will be the first Thing to go bad.
  • Your watermelon salad will keep in an airtight glass container in the fridge for ~2 days.
