The Best Watermelon Salsa

If there is one thing I must make at least twice a week during the summer months, it’s this watermelon salsa! It’s just too good and oh so easy! It’s one you won’t get tired of making.

Now, I know I’ve been a bit MIA here and that my bad. We’ve been working on designing a new website and my creative juices just weren’t flowing. But she back and whatever and We’ve got lots of bomb recipes coming! So definitely stay tuned.

How to make Watermelon Salsa

Ok, to make this watermelon salsa, you just need a few simple ingredients. You probably have them all on hand.

  • Juicy watermelon
  • Cucumber
  • Jalapeño pepper
  • Red onion
  • cilantro
  • Lime juice
  • Tajin
  • Salt

You will notice I am using Tajín Clásico seasoning. Tajín is a super popular Mexican seasoning made with ground dried chile peppers, dehydrated limes and sea salt. If you don’t have it on hand, you can do without it. But, if you have it on hand or can get your hands on it, it is a game changer. Tajín is great on fruits like watermelon because it cuts through the sweetness and adds the perfect amount of citrusy goodness.

Once you gather up your ingredients, it’s pretty straightforward from there. Put them all in a bowl and toss them together.

One thing that is super important is to chop all the ingredients to the same size. Uniformity is important because it looks beautiful, and you know you’re getting all the flavors in each bite.

The Best Watermelon Salsa

Ingredients

  • 3
    cups diced watermelon (make sure the pieces are fairly small, about 3/8” to 1/2”)
  • 1/2
    a large cucumber, peeled and diced to the same size as the watermelon
  • 1/2
    a large red onion, diced to about the same size as the cucumber
  • 1
    jalapeño pepper, seeds removed and finely chopped
  • 1/3
    cup freshly chopped cilantro leaves
  • juice of 1 lime
  • 2
    tsp Tajín Clásico *SEE NOTES
  • 1/4
    tsp sea salt

Instructions

  1. To begin, add the watermelon, red onion, cucumber, jalapeño and cilantro to a large bowl.
  2. Pour the lime juice on top along with the Tajín and sea salt.
  3. Gently toss all the ingredients together, making sure not to stir, you don’t want to break up the watermelon pieces. When all the ingredients are well combined, taste and add more Tajín or salt as needed. I usually end up adding more Tajín because it’s just too good.
  4. Serve the salsa immediately with chips or over tacos. Leftovers will last in the fridge for a couple days.

Notes

  • *You certainly don’t need the Tajín. So don’t worry is you don’t have it or can’t find it. Just add a little more salt and lime juice as needed.
