Easy Pomegranate Mocktails

The holidays are upon us and you are cooking up a storm. But don’t forget to keep the drinks flowing! That where these Pomegranate mocktails come in! It’s a fun twist on the classic mojito cocktail. They are easy, fun, delicious and the you can easily make a larger batch for a crowd.

I’m a huge fan of these pomegranate mocktails for a few reasons:

Festive: the beautiful red of the pomegranate makes this the perfect holiday drink. It’s beautiful enough to impress the whole fam. But also so easy and fun.

Healthier: normally the classic mojito cocktail is made with lime juice, sugar, white rum, mint leaves and soda water. But my version removes the rum, sugar and soda water. Instead, we use monk-fruit simple syrup to add more sweetness and lime sparkling water to top off the mocktail. Then to pump up the nutrients, we add antioxidant rich pomegranate juice which is also a natural anti-inflammatory. Which makes this mocktail the perfect finisher for all of the otherwise heavier holiday meals.

Non-alcoholic: this is obvious, but because we aren’t adding alcohol, the whole family can enjoy this one. Whenever you are planning a party or a big dinner, you want to make sure you always have a non-alcoholic drink option. This is one that is delicious, but also easily customizable. Those who don’t want alcohol can enjoy the mocktail as is. And those want some alcohol can easily add a splash to their drink.

HOW TO MAKE POMEGRANATE MOCKTAILS FOR A CROWD:

The recipe below is set to make one drink. But, you can easily increase the serving size on the recipe card to make a larger batch for a crowd.

First, you want to add the pomegranate juice, lime juice and simple syrup to a large pitcher. Put the mint leaves in the palm of one hand, then clap using the other hand to release the oils. Add the mint leaves to the pitcher and gently stir to release more of the mint flavor into the liquids.

Now chill the mixture until you’re ready to serve. If you are prepping this more than an hour or two ahead of time, leave the mint leaves out until you are ready to serve!

When you are ready to serve, add ice to the pitcher and top it off with the sparkling water. Now pour into individual glasses and enjoy.

Ingredients

  • Grapefruit-infused Simple Syrup

  • 2/3
    cup low carb sugar substitute (I like swerve granulated sugar replacement) *SEE NOTES
  • juice of 1/2 a grapefruit
  • 1-inch grapefruit peel
  • Pomegranate Mocktail

  • 2
    ounces pomegranate juice
  • 1.5
    ounce grapefruit infused simple syrup
  • 2
    wedges lime
  • 3
    mint leaves
  • lime sparkling water

Instructions

  1. To begin, make the simple syrup. Add 1 cup of water, the sugar substitute, grapefruit juice and the grapefruit peel to a small saucepan over medium heat. Stir the mixture frequently until the sugar melts completely. Bring the mixture up to a simmer and simmer for about 3 minutes.
  2. Remove the syrup from the heat and allow it to cool completely. Transfer to a jar with a tight lid and store in the fridge for up to a month.
  3. Now, make the mocktail. Add the pomegranate juice, simple syrup and lime wedges to a cocktail shaker. Muddle the ingredients to release the juice from the lime wedges. Now, clap the mint leaves and add it to the shaker. Stir the mixture to combine.
  4. Add some ice to a tall glass and pour the pomegranate mixture over the ice. Now, top with sparkling water and garnish with lime slices and mint leaves.
  5. Enjoy!

Notes

  • * you can also use regular sugar when making the syrup. Just make sure it’s a 1:1 ratio (1 cup water, 1 cup sugar along with the grapefruit juice).
  • If you want, you can use ginger ale to top off your mocktail. You don’t need to add any sweetener if you’re going to use ginger ale or any sweetened soda.
  • You can also use Stevia or monk-fruit to sweeten your mocktail if you don’t want to or don’t have time to make the syrup.
