Easy Grilled Peaches, Tomato and Burrata Salad

Is there anything better than grilled peaches during the summer months? Yes! There’s one thing that’s better. Grilled Peaches and tomatoes tossed in a balsamic vinegar dressing and served with burrata cheese. It doesn’t get any better than that baby.

This is a salad I randomly threw together for one of the first times I had a friend over since quarantine. it was so good I decided it needed to be shared because I can’t not share deliciousness with you. We’re fam and I just can’t leave you out like that. So we enjoyed this refreshing salad and caught up on some housewives!

Ok speaking of housewives, this season of Potomac is another level of entertaining already! At first, I thought Wendy was doing too much, but by the second episode this season, I knew Wendy would probably be my favorite this season. Her whole vibe is just different and I AM HERE FOR IT! Am I alone on this? I kinda thought it might be Wendy who would be the one to put Gizelle in her place. But BABY, I didn’t think it was going to be that good.

But let’s get back into this salad shall we. Honestly, I don’t have anything more to add. It’s bomb so make it before summer comes to an official end. I It’s a great way to use up some of those tomatoes you picked from the garden. Or if you’re like me and all your friends and family are giving you lots of tomatoes. By the way, thanks loved ones. Grilled Peaches, Tomato and Burrata Salad

Ingredients

  • 3
    Peaches, halved, pitted and each half cut into 4 pieces
  • 1
    tbsp olive oil, plus 2 tbsp
  • 1
    tbsp brown sugar
  • 2
    medium sized tomatoes, cut in half and each half cut into 4 pieces
  • 1/4
    of a red onion, thinly sliced
  • 1/4
    tsp sea salt
  • 1/4
    tsp freshly cracked black pepper
  • 2
    tbsp balsamic vinegar
  • 6–8 basil leaves, roughly chopped
  • 8
    ounces burrata cheese, torn into smaller pieces

Instructions

  1. To begin, heat a grill pan over medium-high heat or preheat an outside grill.
  2. Toss the peaches with 1 tablespoon of olive oil and the brown sugar. Transfer the peaches to the grill/grill pan, flesh side down and grill on both sizes for about 2-3 minutes. Remove the peaches from the grill/grill pan and transfer them to a serving dish along with the tomatoes and red onions. Season with the salt and black pepper, toss and set aside. Now, add the balsamic vinegar and the remaining 2 tablespoons of olive oil to a small bowl and whisk to combine.
  3. Pour the balsamic and olive oil mixture over the peaches and tomatoes and lightly toss to coat. Finish the salad with the basil leaves and fresh burrata cheese.
  4. Serve immediately with crusty bread or as a side salad.
